We sweeten our bars with coconut palm sugar, which is a low glycemic sweetener - it will not spike blood sugar like most sweeteners do. Paired with raw cacao, which contains healthy fats, coconut palm sugar will slow down sugar digestion even more. We also use lucuma and vanilla powders in our bars to add a bit of natural sweetness without having to bump up the sugar content. About Raw Cacao
Cacao is one of the best foods for health. It's actually a fruit that grows on rainforest evergreen trees. The cacao beans, which are what is used to make chocolate and normally purchased in powder form, come in white-flesh pods (the fruit) packed together and all surrounded by a hard shell.

Not only does raw cacao nourish our bodies, but it's also a food that helps open the heart. Frequently Asked Questions
What's the difference between cacao and cocoa?
CACAO is a whole food packed with heart healthy nutrients (see chocolate description), usually available in raw form for purchase (paste or powder). Since it is not processed, it is usually handled in small quantities and not in big commercial machinery. Fair trade and slave free cacao farms are what to look for when purchasing cacao.
COCOA is the processed form of cacao. Like any processed food, the beans are stripped of its nutrients during processing and handling, which will result in a cheaper product all around (cost and nutrient value).
How many calories does one chocolate bar have?
Chocolate bars have not yet been tested in labs to determine exact calorie count and nutrition label content.
As a nutrition educator and health advocate, I do not encourage clients to get caught in the calorie counting trap. Calories are not all equal - for example, 100 calories of fresh fruit does not equal 100 calories of cookies, and 200 calories of almonds does not equal 200 calories of chips. Every food has different nutrient value, and it's the nutrients that are important to look at instead. That said, I do not like to emphasize calorie count, fat, and sugar content in the food and snacks I prepare because I focus on using only the most nutrient-dense and unrefined ingredients. How many bars can I have at a time?
This chocolate is packed with nourishment. I suggest you listen to your body to tell you when you've had enough, it knows how much chocolate you need at any given time. It's not the same as eating a conventional chocolate bar. One bite may satisfy and provide the physical and mental nourishment you need.
How do I store my chocolate bars after purchase?
The bars are shelf stable and will last up to 12 months in a dark, dry place with temperature of 70 F or cooler. If your living area is hotter than 65 F, please store them in the refrigerator in a sealed container since chocolate can easily absorb other tastes and smells.
